                              DID YOU KNOW? Guinea hens come from Africa and there are more than twenty breeds. Their dark plumage is covered with white spots and they have a very loud cry.

                        COOKING TIPS
                        
                          
                            - Guinea hen can be prepared in many ways: marinated, braised, stuffed, roasted, or cut into pieces and grilled on the barbecue.
 
                            - Whole:  it can be stewed or grilled in the oven while basting frequently with its own juice. It can also be marinated and cooked in pieces in a moderate oven, around 190oC (375oF).
 
                            - Carved: the Guinea Hen breast can be cooked boneless, with or without skin. It must be seared rapidly in a pan like a steak and then finished in the oven for a few minutes at 190oC (375oF). The breasts can also be marinated and then cooked on the barbecue.
