QUAIL


DID YOU KNOW? Quail originally comes from Asia or Africa. There are many species, but those known for their meat are the Japanese quail and the domestic quail.



COOKING TIPS

  • Like all poultry with lean meat, care must be taken to ensure that the meat does not dry out when cooking.
  • Can be roasted, braised, cooked in a casserole, grilled, or stuffed. Cooking times ranges from 20 to 25 min., though slightly longer if stuffed.
  • Quail can be barbecued but it should be marinated to make it more flavourful.
  • Quail cooks more quickly when butterflied, or as they say in French “en crapaudine” (shaped like a toad).
