                              DID YOU KNOW? Quail originally comes from Asia or Africa. There are many species, but those known for their meat are the Japanese quail and the domestic quail.

                        COOKING TIPS
                        
                          
                            - Like all poultry with lean meat, care must be taken to ensure that the meat does not dry out when cooking.
 
                            - Can be roasted, braised, cooked in a casserole, grilled, or stuffed.  Cooking times ranges from 20 to 25 min., though slightly longer if stuffed.
 
                            - Quail can be barbecued but it should be marinated to make it more flavourful.
 
                            - Quail cooks more quickly when butterflied, or as they say in French “en crapaudine” (shaped like a toad).
