B.B.Q Rock Cornish Hen with cumin, lime and coriander

(4 serving)


2 Cornish hens, cut in halves   2
3 Zest and juice of  large lime  3
15 mL  Olive oil      1 tbsp
1   Garlic clove, finely chopped  1
10 ml  Cumin grounded    2 tsp
1 ml  Coriander grounded   ½ tsp 
Salt and pepper


1. In a shallow dish, arrange Cornish hen halves without stacking.

2. In a bowl, stir together all marinade ingredients; set aside 30 mL (2 tbsp) of marinade in a covered bowl in refrigerator; pour remaining marinade over hens.

3. Marinate hens in refrigerator for 2 to 4 hours, turning over occasionally.

4. Remove Cornish hens from marinade and drain well. Preheat barbecue to maximum heat and place hens on one side of grill. Cook hens on both sides over indirect heat by turning off the burner where hens are and keeping the other on high.

5. At higher heat , close cover and continue cooking. Turn hens at least twice and brush often with reserved marinade so meat is moist.

Cook about 45 minutes, or until meat is tender.
